Easter Recipe Inspiration



1. Traditional Roast Lamb with Rosemary & Garlic

Traditional Roast Lamb

A succulent roast lamb is a staple for Easter Sunday. Pick up a quality cut of local lamb from our butchery, perfectly paired with farm-fresh rosemary, garlic, and seasonal vegetables.


Ingredients:

  • 1 leg of locally sourced lamb

  • 4 cloves garlic, sliced

  • 2 tbsp fresh rosemary, chopped

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • Seasonal root vegetables (carrots, parsnips, potatoes)

Method:

  1. Preheat your oven to 180°C.

  2. Make small incisions in the lamb and insert slices of garlic and sprigs of rosemary.

  3. Rub the lamb with olive oil, salt, and pepper.

  4. Place the lamb in a roasting tray with chopped root vegetables.

  5. Roast for approximately 1 hour 30 minutes (or until cooked to your liking).

  6. Let the meat rest before carving and serving.



2. Hot Cross Scones


Hot Cross Scones

A fusion on the hot cross bun and a Cornish classic, these scones are packed with spice and fruit, using Boscastle Farm Shop’s fresh eggs and dairy.


Ingredients:

  • 225g self-raising flour

  • 50g butter

  • 25g caster sugar

  • 50g mixed dried fruit

  • ½ tsp ground cinnamon

  • ½ tsp mixed spice

  • 1 free-range egg

  • 100ml milk

Method:

  1. Preheat your oven to 200°C.

  2. Rub the butter into the flour until it resembles breadcrumbs.

  3. Stir in the sugar, fruit, and spices.

  4. Whisk the egg with milk, then add to the dry ingredients to form a dough.

  5. Roll out to 2cm thick and cut into rounds.

  6. Bake for 12-15 minutes until golden.

  7. Serve warm with clotted cream and jam.



3. Spring Garden Salad with Homemade Honey Dressing


Spring Garden Salad

For a lighter Easter option, create a refreshing salad using our farm shop’s seasonal greens, paired with a delicious honey dressing made from our locally sourced honey.


Ingredients:

  • Mixed salad leaves (lettuce, spinach, rocket)

  • 1 cucumber, sliced

  • Cherry tomatoes, halved

  • 50g crumbled goat’s cheese

  • Handful of walnuts

  • 2 tbsp Boscastle Farm Shop honey

  • 1 tbsp wholegrain mustard

  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • Salt & pepper to taste

Method:

  1. Combine salad leaves, cucumber, cherry tomatoes, goat’s cheese, and walnuts in a large bowl.

  2. In a separate bowl, whisk together honey, mustard, olive oil, vinegar, salt, and pepper.

  3. Drizzle the dressing over the salad just before serving.
